A chapli kebab is not a burger.
It is pressed wide and thin so that almost all of it is edge, then fried on a flat tawa until those edges go dark and brittle while the middle stays loose and juicy. Get that balance wrong and you have a rissole.
The rest of the menu follows the same logic. Sajji roasted whole and slowly, karahi reduced hard in the pan it is served in, kabuli pulao built on stock rather than water. Eleven things, no filler.
